Veronica’s heartwarming mushroom and rocket soup

Today is just a real cold into your bones kind of day and for lunch, I was feeling peckish, so came up with a new mushroom and rocket soup.


I felt like sharing as it worked out really well!




Ingredients for Mushroom and Rocket Soup


1 carton of mushrooms (300g)
2 large cloves of garlic
rocket leaves (optional)
teaspoon of curry powder (optional)
frsh thyme leaves and parsley
olive oil


How to make Mushroom and Onion Soup

Wash the mushrooms and then blend with the garlic and herbs and rocket  into a smooth consistency in your blender.  I got mine from a friend as a wedding present and it remains on the kitchen counter and is used all the time.

Using a heavy bottomed pan or pot, heat one tablespoon of olive or sesame oil, then add  your mushroom mixture plus your curry powder plus a teaspoon of salt flakes as well as plenty of ground black pepper.

Once heated add 50 mil of boiling water and let it simmer for a couple of minutes,


Serving Tips


- Place in warmed bowl with some Greek style yoghurt and sesame seeds on top – delicious , nutritious and really fast!


It is optional to roast the sesame seeds – they are lovely both ways but if you think of it then fire away and roast!


There are plenty of ways add or change  this recipe – one is to use home-made stock rather than boiling water.  – I am always a bit reluctant to use stock cubes so stick with the water.


The main thing is to warm yourself up and enjoy!
